Will a photo I upload keep the date it was taken?
Not by itself. A photo you import starts with today's date, whatever its file says. That is why it is worth setting the date on each photo's line — press the date, pick the day in the calendar — before you press Import.
The date decides where the photo lands in the book, and it has to fall inside the period the book covers. If you forget, you can still fix it afterwards: open Edit content, find the photo and press the pencil.
Where to find it: Add content → Import photos → the date on each photo.
